Scamorza is a string cheese typical of the Campania region produced in almost all of the south and some regions of central Italy. The origin of this cheese is, as often happens, unclear: it is said that during the preparation of Provola, which actually resembles Scamorza, one wheel went bad; to remedy this, the manufacturer tried to treat it with water at a higher temperature than usual, and thus Scamorza was born.
