The Calabrian appetizer cannot miss the aubergine fillets in oil which are usually accompanied with spicy sausage, capicollo, soppressata and pecorino cheese. Fillets of aubergines in oil are one of the best and most used preserves in Calabria, often self-produced at home by aunts and grandmothers. Our fillet aubergines are processed by hand in compliance with the recipes used in Calabria precisely for the self-production of this preserve.
In our aubergines, in fact, we include mint and the inevitable non-spicy chilli pepper. We only use selected and very high quality raw materials but above all we do not use any type of preservative, coloring or other ingredient that is not natural.
To this we combine extra virgin olive oil and locally produced wine vinegar.
Ingredients: Aubergine fillets, extra virgin olive oil, sunflower seed oil, wine vinegar (contains sulphites), salt, mint, garlic (contains sulphites) and chilli pepper.
NATURAL PRODUCT Once opened, cover with oil and store in the fridge.
