Pancetta is undoubtedly one of the most common cured meats in Calabrian cuisine. It is obtained from the lower rib of the pigs and is presented in alternating layers of fat and lean. The pancetta is typically flavored with red pepper and can be stretched, sectioned with the rind and cut into a rectangular shape, or rolled, skinned and wrapped in gut.

Finally, it undergoes a slow maturation which is about forty-five days for the stretched pancetta and about ninety for the rolled one.
