Its processing takes place using medium cut shoulder and under-rib meats, appropriately flavored with black pepper, red pepper and in some cases even with fennel. This delicious salami is stuffed into natural pork intestines subsequently perforated and left to mature for 30 days in a climate that gives it particular tastes and aromas.
